Pressure Cooker Black Beans (& Corn)

Cook Time: 50 minutes

Ingredients

  • 1lb of Black Beans
  • 1/4 cup of White Onion Roughly Chopped
  • 2 Garlic Cloves
  • 1 Bay Leaf
  • 1 tsp of Kosher Salt
  • 1 tsp of Pepper
  • 4 cups of Unsalted Chicken Broth
  • 2 cups of Water
  • 1 can of Corn (Optional) [White, Yellow, or Mixed]

Prep

  1. Rinse black beans and pick out any stems.
  2. Chop the white onion.
  3. Chop up the garlic.
  4. (Optional) If adding corn, drain and rinse it.
  5. Add everything to pressure cooker.

Cooking

Cook
  1. Use bean setting on pressure cooker and cook for 25-30 minutes.
  2. Natural release for 20 minutes.
  3. Remove bay leaf.
How to Serve
  1. Serve over rice with Barbacoa Beef in bowl or with other desired meals.
