Barbacoa Beef Nachos

If serving as leftovers from Barbacoa Beef Bowls:

Prep Time: 5 minutes
Cook Time: 5 minutes

If cooking all ingredients fresh:

Serves: 2-3 per Cookie Sheet of Nachos / 10-15 (estimated) total servings
Prep Time: 2 hour
Cook Time: 6 hours 15 minutes (plus 10-15 minutes for each additional cookie sheet of nachos)

Ingredients

If serving as leftovers:

  • Tortilla Chips (We recommend low sodium or lightly salted chips).
  • About 6-8oz of Mexican Blend Cheeses (We like the 4 cheese Kraft blend).
  • Left over Barbacoa Beef
  • Left over Pico
  • Left over Black Beans (& Corn)
  • Cotija Cheese (Optional)

If making fresh:

  • 2lb Pot Roast
  • 32 Oz Unsalted Beef Broth
  • 6-7 Garlic Cloves
  • 2 White Onions
  • 3 Tomatoes on the vine
  • 1 Red Onion
  • 1-2 Jalapeños
  • 4oz Can of Diced Green Chiles (hot or mild)
  • 7oz Can or smaller of Chipotles in Adobo Sauce (only need 3 chipotles)
  • Cummin
  • Mexican Oregano
  • 4 Bay Leaves
  • 2 Tbsp of Apple Cider Vinegar
  • 2-3 Limes (1/4 cup of Lime Juice)
  • 1/2 tsp Garlic Powder
  • 2 Cups of Water
  • 1lb of Black Beans
  • 1/4 cup of White Onion Roughly Chopped
  • 4 cups of Unsalted Chicken Broth
  • 1 can of Corn (Optional) [White, Yellow, or Mixed]
  • Kosher Salt
  • Cracked Pepper
  • Cotija Cheese (Optional)

Prep

If serving as leftovers:

  1. Lay chips out on cookie sheet.
  2. Cover with cheese.
  3. Add Barbacoa Beef.
  4. Add Black Beans (& Corn)
  5. Add Pico.
  6. (Optional) Crumble a little Cotija Cheese on top.  (I prefer it without, but it’s not a bad option.)

If making fresh:

  1. Cut pot roast into 1-2″ cubes and season with kosher salt and pepper to desired seasoning, and place in crockpot.
  2. Mince 4-5 cloves of garlic and add to crockpot.
  3. Finely chop one white onion. Add to crockpot.
  4. Pour green chiles into crockpot.
  5. Add 3 chipotles to the crockpot.
  6. Lightly season with cumin (about 1/2 tsp).
  7. Add 1 Tbsp of the Mexican Oregano.
  8. Add 3 bay leaves.

  9. Add 2 Tbsp of Apple Cider Vinegar
  10. Squeeze limes into pot.

  11. Add enough beef broth into pot to cover all of the ingredients.

  12. Stir.
Pico (View Individual Recipe)
  1. Dice 3 tomatoes.
  2. Finely dice 1/2 – 3/4 cup of red onion.  (Start with less & add more as desired.)
  3. Finely dice 1-2 jalapeños.  (Add to desired heat.)
  4. Add ingredients to bowl & mix.

  5. Add 1/2 tsp of garlic powder. (Add more if desired.)
  6. Add kosher salt & pepper to desired amount.
  7. (Optional) Squeeze lime juice from 1/2 lime.
Black Beans (& Corn) (View Individual Recipe)
  1. Start about 65-70 minutes before dinner.
  2. Rinse black beans and pick out any stems.
  3. Roughly chop 1/4 cup of white onion.
  4. Chop up 2 garlic cloves.
  5. (Optional) If adding corn, drain and rinse it.
  6. Add everything to pressure cooker.
Nachos
  1. Once everything else is cooked and prepped lay chips out on cookie sheet. Each cookie sheet serves 2-3 people depending on size and amount of toppings.
  2. Cover with cheese.
  3. Add Barbacoa Beef.
  4. Add Black Beans (& Corn)
  5. Add Pico.
  6. (Optional) Crumble a little Cotija Cheese on top.  (I prefer it without, but it’s not a bad option.)

Cooking

If serving as leftovers:

Nachos
  1. Preheat oven to Broil.
  2. Place cookie sheet in oven.
  3. Once cheeses in the center are melted remove from oven.  KEEP A CLOSE EYE ON THEM! They will cook within a few minutes.  Outside chips may burn a little to melt the cheese in the middle.

If making fresh:

Barbacoa Beef (View Individual Recipe)
  1. Heat on low 6-8 hours, stirring occasionally.
  2. At 6 hour use a fork to shred the beef and put back in the juice.

  3. Remove the bay leaves.
Black Beans (& Corn) (View Individual Recipe)
  1. Use bean setting on pressure cooker & cook for 25-30 minutes.
  2. Natural release for 20 minutes.
  3. Remove bay leaf.
Nachos
  1. Preheat oven to Broil.
  2. Place cookie sheet in oven.
